Wow! This Flavor is Amazing!

We genuinely enjoy talking about salt, how it can be used to enhance the flavor of a dish, and answering questions. 

One of the most frequent questions is: “How do you decide on a new flavor?”

On the surface, it appears to be a fairly simple question to answer, however there is a great deal of thought and testing involved in bringing a new flavor to the line.

Our chief flavor expert and founder, Eric, starts the process with researching current food trends, consulting with chefs and friends in the food industry, and exploring outstanding restaurants.

Being based in Portland gives us the advantage of working with some of America’s best chefs and restaurants.

Once flavor profile has been decided upon, we begin the testing phase. Using our base fleur de sel sea salt, it is smoked and then infused with the flavor we have selected. The two most important things we are looking for is a full flavor and beautiful color. We use only natural real food for our infusion. No oils or artificial coloring or flavoring. Sometimes a flavor works right from the start and we have to make few adjustments to it, however most often it takes a few weeks of adjusting the amount of the infusion flavor in order to reach the perfect combination of taste and color. 

The goal is always to create a product that you would want to leave on your kitchen counter and use on a daily basis.
